Bacon Jack Chicken Sandwiches!

This may seem like a super minimal recipe, but it's a weeknight favorite here at my house! You don't have to do a lot of work to make a crowd-pleaser! Enjoy!

Bacon Jack Chicken Sandwiches

Recipe makes 4 sandwiches

Ingredients:
  • 8 slices bacon
  • 4 skinless, boneless chicken breasts
  • 2 teaspoons poultry seasoning
  • 4 slices pepper jack cheese
  • 4 hamburger buns, split
  • 4 leaves of lettuce (optional)
  • 4 slices tomato (optional)
  • 1/2 cup thinly sliced onions (optional)
  • 12 slices dill pickle (optional, and I usually use Claussen)

Directions:
  1. Preheat a grill for medium heat (or feel free to even make the chicken in a skillet).
  2. While the grill preheats, place the bacon in a large skillet over medium-high heat. Cook until browned on both sides. Remove from the pan, and drain on paper towels.
  3. Rub the poultry seasoning onto the chicken pieces, and place them on the grill (or the skillet where you fried the bacon; feel free to leave the bacon drippings). Cook for about 6 minutes per side, or until no longer pink in the center. Top each piece of chicken with 2 slices of bacon and 1 slice of pepper jack cheese. Grill for 2 to 3 more minutes to melt the cheese.
  4. Place each piece of chicken on a bun, and top with lettuce, tomato, onion and pickle slices before serving with your favorite condiments.
